Banana flour pancakes

"I really thought banana flour would taste like bananas, but that really is a misunderstanding."

Banana flour is said to be the new almond flour. I made these healthy pancakes with it and I can ensure you it is very nice flour to work with. And also very healthy.
This recipe is a recipe of 'Voedingsgeluk' which I was allowed to make.

Preparation time: 5 minutes
Baking time:          approximately 2-3 minutes per pancake

100 grams banana flour      
2 eggs
250 milliliters almond milk
35 grams blueberries

How to make it?

Mix the banana flour with the eggs and half of the almond milk. This batter will become relatively thick, but don't worry it will become more thin later. Mix the ingredients very well.

Add the rest of the almond milk slowly while you keep on mixing the batter. When all the almond milk is added, mix the batter into a smooth batter.

You now have a nice and thin batter and you can start baking the pancakes. My frying pan is approximately 21 centimeters in diameter and I made 7 pancakes with this amount of batter.

Once the pancake starts to bubble and the top starts to become dry, you can flip the pancake. These pancakes are very easy to flip, even the first one turned out perfectly.

As decoration I used some blueberries and a drop of agave syrup to sweeten them a bit. This is of course personal taste.
