Banana flour pancakes
"I really thought banana flour would taste like bananas, but that really is a misunderstanding."
Banana flour is said to be the new almond flour. I made these healthy pancakes with it and I can ensure you it is very nice flour to work with. And also very healthy.
It is the third week already in the cooperation with 'Voedingsgeluk'. Two weeks ago I made a lovely smoothie. Last week I made a banana bread. This week it is time for a lovely breakfast recipe.

For this breakfast recipe I need banana meal. Since I live and eat more healthy I got to know more and more sorts of meal and flour, but banana meal is new for me. On the internet I find that you can buy it at the Holland & Barret. I do have to go downtown, so I buy it right away. I really thought banana meal would taste like banana, but that is a misunderstanding, I don't taste any banana at all. As they say with Holland & Barret: "Banana meal has a quite neutral, slightly nutty flavor."
"The meal consists of starch which is recognized as a fiber by the body. It does not give huge ups in your blood sugar. Another advantage of this banana meal is the fact that it is gluten free. I can imagine how curious you are about this recipe, so I will share the recipe with you
Preparation time: 5 minutes
Baking time: approximately 2-3 minutes per pancake
Amount: 7 pancakes (pan of 21 centimeters diameter)
