Honestly I had never bought a winter carrot, until this winter I made a tomato soup myself. Suddenly I needed a winter carrot. When they were not available I bought small carrots, but I did not need that many of them. The carrots that I had left, I put in a smoothie, because I did not know what to do with it.
Some people around me said that carrot is so nice and sweet, honestly I had never noticed that. By accident I found a muffin recipe on the internet with carrot and bananas. I changed the recipe a bit and decided to make this recipe. Although I was a bit scared that the carrot taste would predominate the muffins, it really didn't. The muffins were actually very delicious. Except the fact that they were very delicious, they also did not fall apart this time. A friend of mine gave me silicon muffin molds, and that is amazing! That way your muffins will never ever stick into the paper of the muffin mold and you get the complete muffin out of the mold, very handy!
Preparation time: 15 minutes
Baking time: 20 minutes
Amount: 9 muffins
This recipe is not 100% organic, because the organic nuts are not available. All the other ingredients in the recipe are organic.
