Small breakfast apple pies. What is better than having breakfast with pie? Not much if you ask me.
Unfortunately we slowly have to admit that Summer is really ending. I find that a pity, because I can really say I don't like Winter or Autumn at all. I am always cold, so those seasons are not the best for me. I might even emigrate to a warmer country one day. These seasons always make me a bit sad and I notice more people are suffering from it. While everybody is very happy in Spring and Summer, it looks like everybody forgets that during Autumn and Winter. Actually it is a bit weird, maybe that is also why I don't really like those two seasons. Maybe we have to make an agreement to just be happy in the Autumn and the Winter. While I am writing this blog (it is September) I am wearing a big sweater, a scarf and my comfy and warm indoor slippers and a big urge to put on the heater.
Who knows there might be a nice Indian Summer and otherwise we have to get used to this season and if we are all just a little more happy with that, the season will be over and it will be Spring before you know it.
The big advantage when the weather outside is not that good, is that you can go into the kitchen. That is usually what I do and I find it perfect weather for apple pie. And pie for breakfast is always a good idea if you ask me. That is why I made these small apple pies with yogurt. A lovely combination with the flax seed and the nuts.
Preparation time: 10 minutes
Baking time: 20 minutes
Amount: 5 pies
This recipe is not 100% organic, because the organic nuts are not available. All the other ingredients in the recipe are organic.
