Cake with gingerbread nuts
Cake with gingerbread nuts, the last and ultimate Sinterklaas* recipe this year. A healthy recipe for a delicious cake with gingerbread nuts. If you bake these nuts yourself, it will take a bit extra time, but that will give the best end result.
I have had a nice weekend again, Friday I had my last day in school and I was home relatively on time, because we could grab an earlier train. And I had weekend finally, at night I wrote a blog and planned on sleeping early, but I didn't manage to do that haha.
On Saturday the alarm went off pretty early, my sister came home after a one month trip through Thailand. Her best friend would pick her up at the airport and I wanted to join her as well, so as a surprise for my sister we went together. At 7 in the morning her friend was with me and we drove to Brussels. Everything there went by a lot quicker than expected which resulted in the fact that I was back om at 09.15 already haha, love it. That way I had a long day which I spend well, in the kitchen, by making this delicious cake. At night we had dinner at my parents new home and my grandmother was also there. We had time to catch up and my sister showed us a selection of the pictures she took there, because I believe she had made 1700 photos in total. But those pictures were really amazing, we had a night filled with fun and I am just glad she is safely back home. Yesterday we had a lazy start of the Sunday. We even slept until Leyla woke us at 09.30. Jens had to play soccer and I had a very relaxed day which we ended with a home made zucchini pizza. The best way to end the weekend if you ask me.
Next weekend we will be celebrating Sinterklaas, the weekend after that I will be learning for my exam on the 17th and that will be my last working week for this year. After that I am almost 2 weeks free from work and enormously looking forward to it!
But step by step so first, Sinterklaas evening and this gingerbread nuts cake fits perfectly with that.
*The Sinterklaas fest is a Dutch fest for children, they believe that this old man and his helpers bring gifts. When the kids are a sleep the helpers go through the chimneys to put gifts in the shoes of the kids and on 5 December when it is the birthday of Sinterklaas they celebrate that on 'presents evening' sometimes Sinterklaas and his helpers come by that evening and sometimes they just knock on the door and leave big bags with presents at the door. The kids get their presents and a lot of treats are being eaten, mostly with a lot of gingerbread spices in it.

Amount: 1 cake (12-15 slices)
