Carrot cake with chocolate. A variant of the well-known carrot cake. This carrot cake is lactose free and it has no refined sugars added.

It has been a while since I baked a real pie. Usually I bake small pies or muffins, but a 'real pie' that has been a while. Accidentally I had a lot of carrots, which meant carrot cake! Everybody know the unhealthy carrot cake with that lovely, but so unhealthy white topping.
I thought it must be possible to do this different and more healthy. I kept the concept of carrot cake the same with spices and I used this chocolate topping. It turned out very well!
I baked this pie during the weekend and I thought it was time to surprise my colleagues with a nice pie. Once in a while I do this, because I like. But they also like what I am doing and would love to taste. That is why I brought a piece of pie for everyone. I told some of them right away that it was carrot cake. To the ones that are not really into vegetables I did not say a thing. After they told me how much they liked the pie I told them there was carrot in it. The funny thing is that everybody said 'oh you do not really taste the carrot.' People like the fact that the carrot is in the pie, but they do not necessarily want to taste it. And actually I have the same thing, so I recognized this. I really liked the appreciation they gave me for this carrot cake. The feedback was very good and that also makes it nice to do this again haha.
Preparation time: 20 minutes
Baking time: 60 minutes + 60 minutes resting time
Amount: 1 cake
This recipe is not 100% organic, because the pecans are not available organically. All the other ingredients in this recipe are organic.
Once the chocolate has harden, you can enjoy a bite of this lovely carrot cake!
