Cheesecake with red fruit. I would recommend this cheesecake when you are looking for a nice (birthday pie), but you do not want it to be bombarded with refined sugars.

I used to look forward to my grandmothers birthday or Mothers day when we went to see my grandmother. She always made toe most delicious cheesecake ever! When it was our birthday we even asked her to make us a cheesecake. She still makes them and I can still enjoy a piece, but not anymore like I used to do. Isn't it strange that when you start eating more healthy, things don't taste the same anymore as they used to. Or that you just think they are to sweet or just taste different. My grandmother made the bottom of the cake from 'bastogne' cookies love it!!
That is why it seemed a perfect idea to make a healthy variant on this cheesecake. But how do you do that?! I had never made a cheesecake before and honestly I did not know how to start. I am inspired by the yogurt cake of Focus on Foodies and here you see the result of the first attempt. A lot of bottom and not that much cottage cheese. I made the cake again with twice as much cottage cheese and fruit and it looked much more like a cheesecake.
Preparation time: 15 minutes
Baking time: 20 minutes
Cooling time: 2-3 hours
Amount: 1 cake
Afterwards you can carefully get the cake out of the spring form pan. And of course enjoy it!
PAY ATTENTION it is not possible to freeze the cake so you have to eat it quick. I can not imagine that could be a problem with this amazing organic cheesecake!
