The people who have already subscribed for the newsletter, read last Monday about the chocolate muffins that would be online. I even put a picture of these delicious muffins with it. Only I can be such a scatterbrain, so I lost the recipe and I missed some of the pictures. So it was time to make new chocolate muffins. Yesterday and this afternoon I tried a lot, but I did not get the same muffins. The muffins I got even fell apart, so I could not put them online. Luckily I had made these amazing cookies last week and that recipe had worked out perfect. So this afternoon I made these cookies again to be able to make the pictures and I will share these lovely cookies with you. By the way I now have a notebook in which I write my recipes, to make sure they will not get lost anymore. And of course you owe the chocolate muffin recipe.
The recipe of this week: chocolate cookies with cashew, made of tigernut meal (also known as chufa flour). Do you also think (just like me) about the cocktail nuts? That is what I thought about immediately and also about how much I loved those. Since I know how many crap there is in these nuts I do not eat them anymore. But these cookies are not made from that nuts haha. The tigernut (chufa) is a root which contains of a lot of healthy proteins and fats. Because the chufa is naturally sweet it is perfect to use for sweet baking recipes like these cookies.
Preparation time: 10 minutes
Baking time: 20 minutes
Amount: 12-14 cookies
Bake the cookies for 20 minutes in a preheated oven. Pay attention that the baking time may differ per oven. Have fun baking and enjoy eating these healthy, organic cookies!
