When I still lived with my parents, I regularly made banana bread, usually with cocoa. That gives a very nice effect, chocolate and banana is a lovely combination. I am actually a big fan of banana bread, but since I have moved in together with Jens, it is very hard to make.
Every week I buy a lot of bananas, but Jens as well as me love them. In the weekend I usually make pancakes with them, Jens puts them through the yogurt. Actually it doesn't really matter how many bananas I buy, they are always gone very soon. The fact that you sometimes hear people say: "I had some bananas left, so I made a banana bread' is completely unrecognizable for us haha.
This week we made the agreement to not eat 2 of the bananas, that way I could make a banana bread and we made it! I wanted to try a variation and that is why I made this banana bread with coconut flour for the taste. I have to say it worked out very well.
Preparation time: 5 minutes
Baking time: 35 - 40 minutes
Amount: 10 - 15 slices
