Easter recipe - Brunch sandwiches. You can decorate these sandwiches with whatever topping you like and you can also make them as big as you like. A perfect recipe which you can make completely to your own preferences.
I don't know how about you, but Easter makes me think of Spring. As a child at Easter I was always allowed to wear my new Summer/Spring clothes for the first time and that also came with new shoes. Even though it was sometimes super cold, I had to wear them haha. And I still get that Spring feeling when I think about Easter, even though nowadays I am not patient enough to wait until Easter to wear my new clothes haha.
When I think of Eater I think of eating outside at long tables with a lot of people. Not that I have ever experienced that myself, but it just gives me that feeling. Easter also stands for long breakfasts or brunches with family and friends. And I am a huge fan of long and big breakfasts, since breakfast really is my favorite meal of the day.
We are not doing anything special for Easter this year, I even think Jens has to work. Good Friday happens to be my free Friday and that is why I also took the Tuesday and Wednesday after Easter off, which results in a short Holiday for me. I have to say I really look forward and after Easter the weather must be better and more like Spring.
Like I said Easter stands for long and big breakfast/brunch/lunch and these brunch sandwiches fit perfectly with that and they are much better than those prepackaged sandwiches from the supermarket.
Preparation time: 10 minutes (+ 30 minutes waiting time)
Baking time: 20-25 minutes
Amount: Approxiately 7 sandwiches (depending on the size)
Bake the sandwiches in 20-25 minutes gold brown in a preheated oven. Pay attention that the baking time may differ per oven.
You can now enjoy these fresh, organic brunch sandwiches. You can also make them the night before you then only have to bake them in the morning.
