I have a confession to make, I never really had a hangover. Maybe that sounds a bit boring, of course I have been tired and not feeling that well after a night out. But a real hangover I luckily never experienced. If I see Jens being hangover I am actually quite happy about it. When the point is there that he has a hangover, which luckily doesn't happen very often I try to take care of him the best I can.
Sometimes I bake him an egg with bacon and make some fresh orange juice or a green smoothies. In the evenings he usually has cravings for pizza and fries. Sometimes we admit to those cravings, but I also very often make a tortizza (a pizza on a tortilla wrap), a healthy alternative for pizza.
These egg muffins with bell pepper are the perfect breakfast when you have a hangover. Eggs are always a good idea and besides that it also contains some vegetables which are perfect. You can even add some bacon if you like that, I made these muffins vegetarian so I didn't. Honestly we ate them for dinner, last Saturday we had a kind of tapas night, just the two of us. Just these muffins, bread, toast and nice spreads. Love to have a night like that together.

Baking time: 20 minutes
Amount: 4 muffins
The muffins rise quite high, but it is possible they will sag afterwards. That doesn't matter for the flavor, they are nice and airy and the taste is amazing. Enjoy!
