Food Diary - lunch in July. Last month the weather in the Netherlands was amazing and I enjoyed it so much, it just makes me so happy when the sun is shining. I hear a lot of people complain that they are not hungry when it is that hot or they don't fancy any food. I definitely do not belong to that category. I can always eat and just love to eat and it doesn't matter to me how hot it is. Although I must admit that last week when it was 35 degrees Celsius (95 degrees Fahrenheit) I did crave a salad instead of ravioli, but I ate 2 big bowls so nothing wrong with my appetite.
Also when it comes to lunch I had a lot of healthy and varied lunches last month and would love to share that with you. As you could have read in my previous food diary I started with intermittent fasting. 2 days per week I workout right when I get out of bed, don't have breakfast and eat at noon my first meal, that is good to burn fat and I do notice my belly getting more flat and feel more sharp as well. Although I must admit that it goes with ups and downs some days it is easier than others. Yesterday I had an intermittent fasting day, but I was super hungry already at 9 o'clock haha. So I drank a lot of water, focused as much as possible on my job and at 11.30 I slowly turned out the oven, when it was warm my lunch in it and eventually it was already 12.05 when I could eat my lunch and honestly I was quite proud of myself. I work out 3 mornings in the week, but at this moment 2 times of intermittent fasting in one week is enough. I consciously made the decision to do this on one working day and one day during the weekend. I also do this because I get up a bit more late in the weekend than during the week so it is a bit easier to last until 12 than when I wake up at 6 already and can't eat until 12. Although it really depends on the day how well it is going and sometimes I am not even hungry at 12 o'clock yet. But when I do intermittent fasting during the weekend this is what my lunch usually looks like.
Gluten free buckwheat pancakes sometimes with cinnamon. I pour a bit (lactose free) yogurt on it and top it with granola. Really one of my all time favorites is this recipe, I could eat it everyday. The recipe for these pancakes will be online very soon. Normally with my breakfast I have my shakie and because this is actually my breakfast I am having it now. My shake consists of water, spirulina, matcha and magnesium. Besides that I take omega 3 and vitamin D3 with it, eat a boiled egg and enjoy my lovely only cup of coffee during the day which is an oat milk latte macchiato.
With this kind of weather a salad is really nice for lunch. I usually hope to have some leftovers from dinner, because I can have them for lunch and that really is an easy and quick way to prepare lunch haha. We made a lovely salad with spinach, sweet potato, nectarine, feta and pecans. I took the leftovers to work with a gluten free sandwich and some hummus.
I made the recipe again another time with halloumi instead of feta and pomegranate instead of nectarine. I put those leftovers in a gluten free wrap and that also was a lovely lunch.
Another delicious lunch I made during the weekend, was a fruit crumble with coconut yogurt. I can enjoy that so much, so much even that I had pain in my stomach for an entire afternoon haha. I hadn't had breakfast that day and while eating lunch I noticed how hungry I was so I kept on eating and had pain in my stomach because I ate way too much haha.
From another cook book I took a lovely lunch recipe. It takes some time but effectively it will only be 5 minutes, but they are definitely worth it. An omelette covered with hüttenkase, apple, cucumber, tomato, Italian herbs and a little bit of cinnamon and the result is this very tasty lunch.
Also from this same cook book I made rainbow omelette, with a bit a different topping than the original recipe with red fruit and blackberries. I used my leftover fruits in combination with the Greek yogurt and it was really delicious.
At last I had a lovely leftover pasta lunch with salmon which I took with me, a really delicious and a bit luxurious lunch.
Do you not have enough time in the morning to make a nice lunch for yourself? See if you have any leftovers from dinner they are perfectly to take with you. Also pasta, wraps or rice are cold very delicious and if you have some opportunity to warm them it is even better. There also are a lot of delicious and easy recipes that will only take you 5-10 minutes time to prepare and take with you. If you don't have that time in the morning you can also prepare it the night before, when you are already cooking for example or just afterwards, because then you are in the flow. If you already have been lying on the couch for the entire night and just want to go to bed you probably don't feel like preparing lunch for tomorrow anymore. So take the time when you still feel like it and believe me when I say that this will really make you happy during lunch the next day. Because nobody is happy with 5 days of peanut butter sandwiches
in a row.
