Food diary - diner in August. Another kind of food diary this time and honestly I had to get used to it also. I regularly forgot to take pictures, but I did eat varied and I want to show you a bit more in this food diary.
Pizza really is one of my favorites and Jens also loves it. If we don't feel like cooking we usually pick a healthy pizza. I actually always pick the Magioni pizza crust which has zucchini in it and it is relatively healthy. I cover it with home made tomato sauce and vegetables. That is usually a combination of chestnut mushrooms, bell pepper, zucchini, leek and red onion but I vary with that. I top mine with mozzarella. On Jens's is also some extra tuna and feta and at last also the mozzarella. 10 minutes in the oven and you are done.
Te weather became a bit colder and all over sudden I felt the urge to make a tomato soup. Jens was not home that night so I decided to do it and enjoyed it very much. Tomatoes, bell pepper, carrot, onion, garlic, of course some tomato puree, broth and herbs. There was a lovely soup on the table and I had made some extra to have a nice lunch the next day.
This month ended a bit colder, but the month had started really warm. So I could still enjoy glasswort which I love so much. I stir fried it with a bit of onion and chestnut mushroom, baked some sweet potato fries in the oven and ate a spinach/cheese burger with it a perfect meal.
Another recipe which we enjoyed very much. I had to work and Jens had to leave before I arrived so he could cook that night. I had put the recipe on the kitchen counter already and he could start right away. And that turned out perfect, because this was really delicious. He had added some extra cashews and herbs and that really made this couscous salad with falafel complete. I baked a spelt pita sandwich with it and ate it with some hummus it was really delicious.
And at last we are going to my ultimate favorite of this month. This crispy tofu I made with mashed cornflakes and they are really tasty. I made the wraps myself from gluten free oatmeal, I filled them with crispy tofu and freshly stir fried vegetables. I made the sauce from organic mayonnaise without additions with a spicy chili sauce (also without additions). It really gave me a Mexican feeling, you get a grab cover them with the sauce and with whatever you like. And I can't get enough.
