Food Diary - Dinner in November
Food Diary, dinner in November. Again another food diary of my dinner from last month. I notice I find it difficult, because I am not really used to taking pictures of my dinner and I sometimes even forget it, but there will be enough inspiration in this blog for you. Eating healthy was a bit unstable this month, but I did enjoy it.
I started the month with 2 nights of working, the first night we had Chinese food with rice, chicken sate and vegetables which was really delicious. The next day I was on a fair until 10 PM and there were a lot of food options, but when I spotted this pizza place I knew that would be it. And my colleague with whom I was thought the same. It was a very small stand where they freshly made and covered the pizza's. Fresh ingredients and herbs went on the bottom and 15 minutes later we could pick our pizza's up.
On Fridays Jens is always working until 21.00 and I had 3 Fridays of training in Rotterdam and afterwards I preferred an easy dinner. Because Jens also is not home it really is a moment of me-time and relaxation. The beginning of the weekend, relaxing and eating, love it! These days I made a nice soup with bread and some cream cheese and as a guilty pleasure I watched a vlog haha.
Another favorite that I love to make on Fridays when Jens is working, are stir fried sprouts with onions, chestnut mushrooms and pecans. I bake some sweet potato fries and a cheese burger with it. I just love it so much. Jens also likes it, but after 2 times of sprouts he likes some more variation while I can eat this every week!
Ok now we head to the less healthy part of this food diary haha. I am all about balance and also like to eat a bit less healthy every now and then, but sometimes the timing is not that good. Jens and I went spontaneously on a Thursday night to the garden store were they have the most, best and most fun Christmas stuff and we also bought some plants for our home. We went right after work and honestly I arrived being hungry already, so when we passed the restaurant we made a real quick decision to grab a bite. I decided to take the tenderloin sate with fries and it was really good! Jens had a burger with a lot of things on it haha.
The day after I was on an open day for work. While I am writing this blog I am realizing how much I have worked last month. But here the had fries and that was our dinner with a lot of mayonnaise and I loved it of course!
After that I tried an experiment which I looked forward to the entire day, but it didn't work out the way I had hoped. I did like, but not what I had expected. I did some pumpkin cubes in toe oven with herbs and hoped they would turn out to be crispy, like the recipe had told me, which unfortunately didn't happen. With that I made crispy tofu, but not with cornflakes but with crushed nuts this time. But the tofu didn't became crispy and didn't have that much flavor as well. It was all alright but definitely not as good as I had hoped unfortunately.
In the weekend we like to make pizza from a zucchini bottom. Which is perfect, because you only have to cover it and bake it. I always make the tomato sauce from tomatoes, sun dried tomatoes, Italian herbs and olive oil. Next I cover the pizza with a lot of fresh vegetables. Which is usually zucchini, bell pepper, chestnut mushrooms, red onion and leek but it depends on the vegetables I have at home. I top it with mozzarella and for Jens with some feta and tuna as well.
Another favorite that we eat a lot in the weekends are burgers. We also vary with them a lot, last time we had these broccoli burgers, but we already made Italian burgers, pumpkin burgers, bell pepper burgers and cauliflower burgers. We usually combine them with an Italian sandwich some sweet potato fries.
At last I made a new oven dish this month which is also a new favorite recipe. The vegetables with the pasta and the melted cheese are really delicious, but it could also be the melted cheese that makes it my favorite.
