Food Diary: Lunch in February. In February I started my new job and my new lunchbox just arrived with different segments. The perfect reason to plan my lunch and prepare it the night before. This went very well at the beginning of the month, but as the month continued I noticed getting a bit more lazy. So it is time to make that up in March.
This pink kick start breakfast from Rens Kroes is one of my favorites. I even took it for lunch this month. A very nice recipe with cranberries and oatmeal. The flavors are very delicious and the recipe is also very filling which makes sure you won't be hungry for the rest of the afternoon. Perfect for me since I have to work until 5.30 pm now and won't arrive at home until 6.15 PM, I am usually quite hungry at 5 pm haha.
In the weekends this is one of my big favorites. On Friday or Saturday I make a crumble usually with pear, khaki fruit and blueberries or cranberries. I warm the leftovers the next day and eat it with yogurt and an egg and i am completely ready for the rest of the day!
I also take leftovers from dinner with me for lunch, usually the portions are too small to eat again for dinner and it is a lot faster then to make a whole new lunch haha. I took this bell pepper/potato soup with halloumi from Chicks Love Food. The big advantage is that we have a small kitchen with an oven at my job, so I can also bake some bread with it.
With special thanks to the oven this was one of the best lunches at work this month. The night before I made 2 wraps with pesto, avocado, tomato, walnuts and mozzarella. When it was lunch time I suddenly thought about the oven, so I put them in the oven for a short while. The end result was super delicious, the mozzarella melted and the wraps became nice and crispy. I would definitely recommend this lunch!
And my last favorite of this month are these mango pancakes from Rens Kroes. Very nice and sweet, even though there are no sweeteners in it, the banana and mango make these pancakes sweet. And they are very filling, I wasn't hungry at all for the rest of the afternoon.
So it was a very varied lunch month in February. And with my lunch planning I will again me preparing lunch at night for the next day. To again make a party of my lunch!
