Food Diary - Lunch in May

Food Diary, lunch in May. It was a varied month when it comes to lunch, with also some lunches in restaurants which I enjoy very much. You can read all about it now.
At the beginning of the month I was on a street market in Middelburg and the weather was perfect. So afterwards I was very hungry and because the weather was that good, I decided to sit down on the terrace of Imagine. I enjoyed these delicious pancakes with maple syrup, curd and fruit. They also these pancakes vegan and they taste delicious.
The rest of the month I tried to vary a lot with the lunch, although that didn't always work out. I tried very hard. I took for example this lovely pink kickstart from Rens Kroes with me to work. I made it in the morning put it in a small jar and put it in the fridge at work.
With the warm weather of last month I also liked it very much to make delicious salad and take that one with me. Since I found this combination of strawberries and spinach this really is one of my favorites. So I made this salad with (raw) spinach, strawberries, nuts and a boiled egg. I also believe goat cheese would taste perfect with it, but I didn't have that at that moment haha. Perfect lunch when the weather is getting more warm.
This picture is not perfect, but the recipe definitely is. I made this lunch during the weekend, because we do have a kitchen at work, but no stove unfortunately. I made a lovely oatmeal porridge, roasted some coconut flakes and added some blueberries and a bit of dark chocolate. And because the porridge is warm the chocolate will slowly melt and everything will taste like chocolate, really perfect and super healthy!
As you probably have read, we went to Maastricht with my parents at the end of May for a weekend and I had lovely lunch there. Both times with a smoothie. The first lunch was a sandwich carpaccio with Parmesan Cheese and pine nuts, an all time favorite. The second day I went for a ham and cheese grilled sandwich. The first smoothie was with mango and the second one with pineapple and coconut, very tasty!
So that was a perfect month with regard to the lunch. Next month is all about breakfast and the first 2 weeks we are on holiday so that will be probably be perfect breakfasts.
