Food Diary - Lunch in October
Food Diary - lunch in October. Last month I had a lot of variation for lunch. I try to plan more for lunch that way I don't have to rush to make lunch in the morning. That is going better and better and you can see the result in this varied overview.
As you might know Jens and I haven't been eating meat for a while. That actually means that we don't cook meat and if we do, it is really good, organic grass fed meat. We do notice a difference in our body when we eat other kinds of meat that is why we decided 1,5 years ago to do it this way. That does not mean we are vegetarians, because when we are with other people we do eat meat. I suddenly had cravings for the wraps I used to make when I still lived with my parents. A whole wheat tortilla wrap covered with pesto, slices of chicken filet, arugula and walnuts. I decided to buy organic slices of chicken filet and enjoyed it so much to eat this again.
Another favorite of mine are the mini Dutch pancakes (poffertjes) of oatmeal with apple and cinnamon. When I have a bit more time in the morning I love to make them for lunch. When I am at work I only have to warm them in the oven. That makes them a bit crispy I put them in a bowl with a bit yogurt, apple, cinnamon and honey which is a really delicious combination.
I also discovered cheese crackers last month and they are so delicious!! I had taken lunch with me, but that was not enough so when I took my lunch break outside and went to the supermarket I suddenly saw these cheese crackers. I am a bit tired of the regular crackers but these ones are really lovely. Certainly with some cheese on them as well. If I have less time in the morning I take those crackers with me and grab some fresh organic cheese at the supermarket to top them with.
At work we have a lady who cleans everything twice a week. She is a Muslim and from her faith she had to do something good for other people around her, because she was not able to visit the pilgrimage to Mecca. For her this 'doing good' meant cooking lunch for us. Not bad such a delicious big lunch. The lunch consisted of rice with some noodles through it, chicken wings which were so smooth that it would glide of the bone and köfte which are actually some kind of mini hamburgers haha. Super delicious!
During the weekend at home I enjoyed these lovely pancakes. I just love them so much, really delicious with some yogurt and fresh granola.
Another favorite of last month was the muesli I got from Realflavors. I made a lot of warm porridges in the morning with that muesli with some almond milk. In the afternoon I also made a nice lunch with it with some yogurt and apple.
A few times this month at night I didn't feel like working at my laptop, but also didn't feel like sleeping yet. At those moments I made delicious banana pancakes for the next day as lunch. Really lovely with some cinnamon on it.
It again was a month with a lot of variation, I really want to continue this pattern in the new month also. The next month you can read all about my dinner which might give you some extra inspiration.
