Food Diary - Snacks in April

Food Diary - snacks in April. This was the month of the energy balls. I found a recipe of matcha energy balls at the beginning of this month and I ate them a lot, because they taste so good. I gave my own twist to this recipe and that recipe will come online soon.
I also tried to again take a smoothie everyday. It certainly didn't work out everyday, but I did enjoy a smoothie every now and then or a home made fruit salad. That is one of the things I like so much about spring coming there will be more fresh fruit and I love it so much!
With those fresh strawberries I also made small pies with an oatmeal/date bottom. I found the recipe at Focus on Foodies and made them straight away. The only disadvantage is that you have to keep them in the freezer, let them defreeze and then you can eat them. But once they are still firm they are froze and too cold to eat. If you let them stand a bit longer, the top is melted and it will be messy. It looks super delicious, but is not very easy to eat haha. But when it is very warm and you eat them when they still are a bit frozen I can imagine it is delicious.
I also had a date with a friend and ex colleague. We enjoyed this healthy apple crumble with healthy whip cream. And honestly that made me enjoy it even more, lovely!
I ended this month a bit unhealthy. I was working and went to the market in my break, where the spring roll stand was. After I bought my organic eggs and cheese, I walked passed the stand and doubted to go for a spring roll, but decided not to do it. When I returned at the office, my boss went to the stand to buy everybody a spring roll because he would go on holiday that day. So still a spring roll with sweet sour sauce. And honestly I very much enjoyed it.
I hope you enjoyed reading this, I didn't have much inspiration to make my snacks myself this month. Next week I am planning to do so again. I did try to make chocolate/nut cookies, but they turned out like some kind of sandwiches. They tasted very good but more like a sandwich than like cookies and they tasted like it haha. So I also want to improve this recipe next month.
