Gingerbread apple pie

Gingerbread apple pie, the perfect autumn pie to warm up with combined with a cup of tea.
Last week on Friday I had a day off. I tried to take Fridays of regularly and I did manage to do so, and I am enjoying those extra days very much. The weekend is just too short with only too days if you want to do that much as I do. That is what I noticed on Friday again, I was everywhere the whole day haha. In the morning we went to Breda with our dog for a check-up. Afterwards I took Jens to his job, because I wouldn't have a car that afternoon otherwise and then I took Leyla to the woods so it would be easier for her to be alone.
I went for a drink with my mom, super nice. And while I was on the road, she send me a message that we would have a drink in town and that my sister would join us!
This was the weather Friday afternoon. We made an appointment at 1.30 at the Marketplace, but I didn't see anybody, and of course I didn't have an umbrella or a hood and my phone was still at home. So I went looking for my mom and sister, but didn't find them. So I walked in 3 cafes and didn't see them. And just when I wanted to give up I walked straight into them, luckily! So we decided to have a drink at Honeypie in Middelburg, a very nice (not so healthy) hotspot. We were not the only ones with this idea, it was really busy over there, but there was just one spot left. We ordered some tea to warm ourselves and had nice conversations. My sister also wanted something to eat with it and she chose Apple/gingerbread pie with whip cream. I just had lunch so I passed, but it was the inspiration for this cake. And honestly this is the best cake that I made so far. The crust even tastes like my mum's apple pie.
