Ginger bread cookies, these healthy cookies are really easy to make, for example with your kids. They taste a bit like 'kruidnootjes' which is a typical Dutch treat when Sinterklaas is coming in December, very lovely to get in those vibes for December and Sinterklaas already.
I am not thinking a lot about it already, but maybe that is because this December month is not really my favorite month, while this is usually different for other people haha. Of course I love those extra free days, but I don't like the 'obligations' that come with it in that month. If it was up to me Jens, Leyla and I were on a sunny island somewhere all month, but unfortunately that is not possible.
This year I started a new job and at that job we work between Christmas and New Years, which is also new for me. At my former job we were always free between Christmas and New Years. And of course a lot of people want to be free between those days so we need to figure out when everybody can be free and also take into account that there are some people in the office as well. I don't like Christmas that much, so i don't mind working in between Christmas and New Years. If you have that week off you already lose 2 days to family visits and obligations. I rather be free in January when you are really free for an entire week and don't have to start working on the second day of January already. That means that I have to work on 24, 27 and 28 December and after the Holidays I have a free week. And I already look forward to that week, because the weeks are extremely busy at the moment at work but also personal.
Last week I had to work one night until 21.00 and one night until 22.00. Besides that some extra evening are on the way on which I have to work. I also am attending a study in Rotterdam for which I have to go there 3 times for an entire day and I have my exam on 17 December and the study is quite tough. Also in December I have to work one more night, my dad's birthday is just before Christmas, I am having my exam and there is Christmas, Sinterklaas and New Years Eve. Quite busy times so I really look forward to that week in January.
To get into that Sinterklaas vibes already, I made these delicious gingerbread cookies.

Baking time: 15 minutes
Amount: Depending on the size 15-20 cookies
