Gingerbread pastries with almond paste

Gingerbread pastries with almond paste, but without refined sugars it is possible and just as tasty as the almond paste with refined sugars. These healthy pastries are super easy and quick to make and they are lactose free as well.
I took the challenge to make healthy Sinterklaas* recipes and quite soon I knew I wanted to use almond paste for it. Last year I found out how easy it is to make by yourself with almond flour and honey and I just love it so much! That is why I created these smaller pastries that you don't have to share and can eat all by yourself.
Besides the fact that I made these delicious pastries I also made 7 other lovely Sinterklaas recipes which are healthy options as well. Like for example (chocolate) gingerbread nuts, gingerbread man and even a chocolate letter. These delicious and healthy recipes are combined all together in a FREE healthy Sinterklaas E-book that you can download below. I am super excited what you think about it. I do have to say that the E-book is currently only available in Dutch.
*The Sinterklaas fest is a Dutch fest for children, they believe that this old man and his helpers bring gifts. When the kids are a sleep the helpers go through the chimneys to put gifts in the shoes of the kids and on 5 December when it is the birthday of Sinterklaas they celebrate that on 'presents evening' sometimes Sinterklaas and his helpers come by that evening and sometimes they just knock on the door and leave big bags with presents at the door. The kids get their presents and a lot of treats are being eaten, mostly with a lot of gingerbread spices in it.

Baking time: 20 minutes
Amount: 5 pastries
Let the pastry cool down a bit and you can enjoy these healthy pastries. They even taste a bit better when they are still a bit warm so don't cool them down too much.
