Gluten free almond cookies
"Do not make the dough too flat, because than you have very thin cookies."
Gluten free almond cookies with vanilla. Lovely and easy short breads made of almond meal. The cookies are gluten free, lactose free and there are no refined sugars added into the cookies.
Ever since I was a little girl I loved baking cookies. I already tried baking different sorts of cookies with oatmeal and banana, but I still think those cookies don't become real cookies. Sometimes they fall apart or they are not crunchy. Somehow they never turn out to be the same as 'real cookies'.
It is Friday and I really feel like baking cookies. That is why I start looking for a recipe. I find a short bread recipe and redesign this recipe into a healthy one. I also add some ingredients. The smell that comes from the cookies, is really amazing. And the same applies to the taste of the cookies. I am very enthusiastic and satisfied about these cookies. And actually I am also pretty proud of the picture. In the food journalism course that I take, I got a few very good tips for making beautiful pictures. And besides that I made a mood board with food pictures that inspire me. Not only with regard to the set up of the picture, but also with regard to materials that have been used within the picture.
Preparation time: 5 minutes
Baking time: 15 minutes
Amount: approximately 15 cookies
How to make it?
Preheat the oven on 356 degrees Fahrenheit (180 Celsius). Melt the coconut oil in a small pan on low heat fire. Meanwhile you can grab the vanilla beans. Cut the vanilla bean in half (in the length) and fold open, this way you can scrape the marrow out of the bean with a knife. Add this marrow into the bowl.
Bake the cookies for 15 minutes on 356 degrees Fahrenheit (180 Celsius). Pay attention that the baking time may differ per oven. You can now enjoy these organic gluten free cookies.
