When I have tigernut flour, I make cookies. I just love that flour to make cookies with. The proportions are perfect, which makes the cookies firm and crunchy. With oatmeal the cookies usually fall apart and with other flour they can get really dry. If you add some extra liquid, they become too wet and you can't make a cookie with it anymore haha.
Making healthy cookies is not that easy as you can see haha. But once you have the right proportions and the right flour they are very easy to make. I just love cookies that much I sometimes turn on the oven at night to make a batch of them. The problem is we are out of them so soon. Jens usually works from home on his webshop and once I arrive at home he has eaten half of all the cookies. A good sign of course, it means he likes them haha. These cookies lasted 2 days I guess before we ate them all. You can't leave gluten free, healthy chocolate cookies just standing there can you?
Preparation time: 15 minutes
Baking time: 20 minutes
Amount: 10 - 15 cookies
Let the chocolate harden a bit, you can do this by putting the cookies in the fridge for a while and you can enjoy these lovely gluten free chocolate cookies.
