Halloween recipe - Pumpkin cake with walnut. This easy cake recipe is a pumpkin variation on the well-known carrot cake, but of course a healthy version of it including a healthy yogurt/walnut topping.
Halloween, I don't do much about it, but I do like pumpkin and I also like how they organize more and more for the kids when it comes to Halloween. In our village they had a scary walk through the entire village. While I was warm at the couch I heard some kids screaming and laughing and those activities are a lot of fun for the kids of course. Just like the activities with the night of the night (when the clock is turning to winter time), they turn the lights of in a lot of places and also organize a lot of things in the dark, like having dinner in the dark or other activities for the kids. I don't always feel like going outside when it is cold, but I do like the fact they organize more and more even when it is not Summer anymore.
Pumpkins symbolize Halloween and that is why I really wanted to make a pumpkin recipe for Halloween. Carrot cake is one of my favorites and that gave me the inspiration for the pumpkin cake including the delicious topping. But of course I made a healthy variant of it.
Preparation time: 15 minutes + 30 minutes waiting time for the pumpkin
Baking time: 35 minutes
Amount: 1 cake
Optionally you can divide some spare walnuts over the cake and enjoy this delicious pumpkin cake.
