Healthy Hotspot The Koffipand in Middelburg. Somewhere in the Autumn of last year I found out there would be a new lunchroom/coffee house opened and that the owner would be one of my former high school friends. I hadn't spoken to her in years and was very excited to read about this. Somewhere I also have a dream to open something like this one day, so I was enthusiastic right away. Besides that Esther Treurniet form the Koffiepand uses as much local and organic products as possible. That is of course something that gets my interest and which fits perfectly with my vision with Organic Happiness. They also try to waste as less as possible and have a 'no waste policy'. I will tell a bit more about that later.
Unfortunately I was quite busy and had not find time to visit them. Until I had a couple of days off three weeks ago and I went for a lunch with my sister. We decided very quickly to take a look at the Koffiepand and it really was a good decision.
You feel the domestic vibe when you enter the Koffiepand, the decoration is very cosy and there is green and plants everywhere. We are warmly received by Esther and have a look at the menu. Like I said everything is as much as organic and local as possible so that can only be good. Somehow I always have the urge to order breakfast recipes and despite the fact that it is 3 PM in the afternoon that is not a problem at all. With the Koffiepand they serve breakfast all day. I chose cottage cheese with mandarin, granola and gingerbread. A very delicious combination.
My sister had a hard time deciding what to order and wanted all the sandwiches haha. When Esther asks if we made a choice my sister shares her difficulties. The sandwiches contain two separate sandwiches Esther explains so if my sister can choose two different toppings Esther can make both sandwiches on one plate. This is the option for my sister. She chose bread with aged cheese, not concentrated apple juice and cornichons. The other sandwich is covered with smoked salmon, cucumber salad and radish.
This flexibility not only makes Esther unique, it also shows everything is really fresh and hand made. I find that very important and you really taste the difference. I could keep on eating thos cottage cheese, the granola and the ginger bread added a nice bite, while the soft mandarin was very refreshing. All by all we ate very lovely. You can go to the Koffiepand for lunch and breakfast, but also for an alcoholic drink and snacks or a piece of cake (with vegan option) the Koffiepand is the place to be.
Just when I was about to go home Esther gave me this Ice tea from Thijstea. Thijs from Thijstea turned out to be her associate and the no waste concept of taste Thijstea really inspired me to write something about it. Yearly a lot of fruit is thrown away, because it doesn't fit the beauty requirements. It has a small spot on it or the fruit is too big or maybe too small. A whole pallet of this fruit is rejected and thrown away. Thijs buys these pallets of this less beautiful fruit and the Ice tea is made by this fruit. Nothing else is added but the fruit. A very beautiful concept against food waste if you ask me.
