This week was a bit of chaos and also quite busy and that already started last weekend. Last week on Saturday I was at a Open Day for my job until 3 PM and arrived home at 3.30 PM. Then I started learning because of the safety exam I had yesterday. That seemed a bit more tough than I expected. Sunday morning I had coffee with a good friend of mine, we chatted a lot and hadn't seen each other since August so that was really very much fun. In the afternoon I turned to my books again. I worked the rest of the week and every free hour at night I spend on making test exams. I didn't really feel comfortable with all the material, but the test exams went quite well. Failing was not an option, not for me because I always want the best, but also because I wanted to make a good impression at my job. Yesterday afternoon the moment of truth was there and when I started the exam I noticed quite some nerves. But I also noticed I knew a lot of the answers. As the exam continued my confidence grew and I finished pretty quickly with the exam. You are not allowed to close the exam yourself, but you have to let the supervisor know you are finished and they will close the exam for you and you get to see the result instantly. I luckily managed to get a score of 80% and 64% would be enough to pass this exam, so I made it! And for me that meant holiday! A short holiday but after Easter I took 2 more days off and today was my part time day, so I am free for a total of 6 days and I just love that so much! .
I already made a list of all the lings I want to make, bake and try the coming days. So I think I will be spending most of my time in the kitchen. And that is my favorite place to be haha. Jens has to work 4 of these 6 days, so I also have a lot of time to write out all these new recipes and plan a lot. The days that we are together we try to do fun things. Or well fun, today we cleaned up our garden house. Not a very fun thing to do but a really necessary thing. We also did a lot of hard work in the garden, with the result of 3 drives with a brimming bus to the dumpsite and now we are on the couch with muscle pain haha. Sunday we also have a day off together and we are planning to go to a car fair in Amsterdam. Dreaming of all those beautiful Ferrari's and Lamborghini's.
And this weekend is the Easter weekend. The start of a lot of Holidays with a lot of half weeks of working, very lovely! We don't do much with Easter this year, but I did make this Easter cake. I hoped it turned out to be a bit more yellow because of the mango, but unfortunately it didn't. It doesn't matter for the flavor by the way!
Preparation time: 15 minutes (+6 hours waiting time for the cashews)
Baking time: 20 minutes
Cooling time: 3 hours in the freezer
Amount: 1 cake (12-15 pieces)
