Matcha coconut energy balls. Matcha is not only super tasty, but it also gives you an energy boost. These energy balls contain even more healthy ingredients, so they really are energy balls for when you are in low energy or can just use some extra energy.
It is Friday morning and my first weekend day was already yesterday. Of course yesterday was ascension day and today is a 'mandatory day off'which is not bad at all and means an extra long weekend for me. And that will be a very relaxed weekend for me, my work is quite busy at the moment, I travel for work and every free hour is in my blog, which results in not taking enough time to rest. I keep on going and when the weather is as good as it was this week, I find it difficult to just relax. Jens was not feeling well for a few days, because he didn't rest enough and was now forced to do so. I want to prevent that haha. So I want to take it easy these days and don't want to plan too much activities. I will do things that I feel like doing, so I want to make hummus for the first time and nut butter and this morning I will go to yoga class and tomorrow afternoon I will go to the terrace with a friend.
All by all a relaxed weekend to make sure I can work very hard the last 3 weeks at work. Those weeks are pretty busy with a lot of meeting and some even until late in the evening, so it is nice to relax to be able to cope with it better. And after those 3 weeks I will relax complete for 3 weeks during my holiday.

Amount: Approximately 30 balls
If you keep the balls in an airtight box in the fridge they will become more firm and you can keep them longer. If you can keep your hands of them of course haha.
