Mini pancakes with apple and cinnamon

Mini pancakes with apple and cinnamon, a healthy breakfast recipe with fresh fruit. These mini pancakes are a really healthy easy breakfast recipe. You only need a special mini pancakes pan.
I used to love those mini pancakes, although we never really made them ourselves. We usually had the prepackaged mini pancakes that you had to warm in the microwave, I would even think about doing that right now, but I used to love those haha. With a lot of powdered sugar on top of it. This spring I was at a food festival and they had those mini pancakes with powdered sugar so I decided to take them. And honestly it didn't taste like the flavor I was used to and it was a bit disappointing for me. For me that was also the moment I decided to try to make a healthy mini pancake recipe myself.
A few weeks later I was on a flea market hoping to find an old-school mini pancake pan and as you can see I managed to do so. But that is just the start, because how do you even make them and which recipe do you use? After a lot of practicing I finally managed to create a delicious recipe last summer. I must admit that when I ate them the first time I really wanted the powdered sugar on it, because I was missing some sweetness. Eventually I made them with maple syrup and fresh strawberries and that was e nice combination during the Summer. You can find this (gluten free and lactose free) recipe in my E-book.
Nowadays the time of fresh strawberries is already behind us and since I like to work with local, fresh products from the seasons I am not using imported strawberries in the winter, but I am choosing different kinds of products. I really love the combination of apple and cinnamon and I suddenly thought that that might be a perfect combination for these mini pancakes and it turned out to be. We eat them almost weekly and with a drop of honey on top you don't even miss the powdered sugar.

Baking time: Approximately 5 minutes per portion
Amount: 2 portions
