Oatmeal porridge with gingerbread spices and mandarin. A healthy, lactose free breakfast recipe which you can make to your own liking. This breakfast is nice and warm also because of the spices and the mandarin gives a very refreshing effect to this breakfast. I always love to use fruit in a breakfast, that fits perfectly into a healthy lifestyle.
Sometimes I suddenly have ideas for recipes that I want to make right away and usually I don't even know where those ideas are coming from. That is also what happened with this recipe. Last week I was working on a planning for the blog for the upcoming months also to plan Sinterklaas and Christmas a bit. I can work ahead and I like that. But I didn't manage to think of any breakfast recipes, it took me a lot of effort to think of some breakfast recipes that I would like to make as well. And suddenly the combination of gingerbread spices and mandarin came in my head, I don't know why, but it seemed like a good idea.
Somewhere deep inside I know where it could come from, in the beginning of this year I was at the Koffiepand in Middelburg with my sister and I had a bowl of yogurt with mashed gingerbread cookies and mandarin and I loved it so much! Even though this has almost been a year ago, it apparently got stuck in my mind and this idea suddenly popped up.
Last week I made this one for myself with a warm porridge which was a great success. Jens does not like almond milk, he likes almost everything but he doesn't like that at all haha. For him I made a cold version with cottage cheese which he also liked very much. So enough possibilities to vary with this recipe, also with the granola. It is most tasty to mix before you start eating, otherwise you have one bite with a lot of gingerbread spices. Your breakfast is now ready to enjoy!
