Pancakes with granola and yogurt

Pancakes with granola and yogurt. These pancakes are lactose free and I also chose plant based yogurt which makes this recipe fully lactose free.
Pancakes are always a good idea for breakfast of lunch if you ask me. At the beginning of February Jens and I went to the Health Fair. Really cool to have a look there, even though I have to admit not everything was completely 'healthy' there and also not everything said there was true, but it was nice to go there once.
As you can imagine on a health fair there is a lot of healthy (and less healthy) food. We had lunch with some people we knew and decided to have lunch at the first food square we found. At this square there was a stand from the Seaweed burger, but also one with vegan cakes, thee and pancakes. And I love pancakes and honestly I love sweet more than I do savory, so I made up my mind rather quick. Jens actually wanted to take the seaweed burger, but the row was very long, so he also decided to go for the pancake.
You could have different toppings on this pancake, traditionally with syrup. But Jens went for the savory one with goat cheese which he liked very much. The pancakes were very tasty, also because they were made from spelt flour. I remember as a child I used to have pain in my stomach after eating pancakes, maybe some gluten intolerance? I recently noticed it again after I ate a white sandwich (which I got on an event), the next day my stomach was all floated. I honestly believe I sometimes have that floated belly because of eating gluten. So actually I would like to experiment in eating less gluten for a month for example, but I don't really know where to start. Even though I rarely eat bread, I think it is difficult. But I will try it soon to see if I notice any difference.
Back to the pancakes, I chose a topping with granola, Greek yogurt and honey. I never came up with that, but it was really delicious!
It also looks super delicious, do you agree? When I was craving pancakes on a Sunday afternoon I though back of these ones. And it inspired me to make a pancake recipe with yogurt and granola. And like I said before I used plant based coconut yogurt and the pancakes are also lactose free.
Preparation time: 5 minutes
Baking time: Approximately 3-4 minutes per pancake
Amount: Approximately 7 pancakes
Once the pancakes are finished you can cover them with the yogurt and granola. If you don't want that, you can enjoy the pancakes right away or put a bit of honey on them.
You can now enjoy these healthy, lactose free, spelt pancakes!
