Pancakes with oatmeal and fruit

"You can slowly pour the batter from the blender into the pan, you will then get nice and small pancakes."

Pancakes with oatmeal and fruit. This variant on the banana pancakes is super healthy and very easy to make.

Unfortunately it looks like Autumn has really started right now. For me Spring and Summer are definitely my favorite seasons, blue skies, sun and going outside without a coat. I enjoy those times so much. Now when you wake up it is still dark outside and that makes it a bit more difficult to get out of bed haha. This is also a time of year in which you slowly pick up a cold or a flu, even though you eat and live very healthy.

Jens went to the Ardennes last weekend with some friends and I ate extra healthy then. Not really on purpose I must say, I don't really like to cook by myself so I made myself an easy pasta and a tomato soup with a lot of veggies which I could just make in the blender haha. Jens came back with a small cold. I made smoothies and orange juices and hoped to not also get that cold. And then comes the moment when you feel the cold coming and because I hate having a cold I will do everything to prevent it when I feel that. So I spend days drinking only green tea with fresh ginger and honey and I have to say that helped me, because I did not really get a cold. For me this was an eyeopener that healthy food can really have a positive effect on preventing a cold or flu even if you already feel it coming. Because I love Summer so much and don't want to say goodbye already I made this lovely pancakes with strawberries.

Preparation time: 3 minutes
Baking time:          Approximately 2 minutes per pancake
Amount:                 9 small pancakes

​Ingredients
2 bananas                    
2 eggs                     
50 milliliters plant based milk
50 grams oatmeal*

3 grams cinnamon
​
Optional (decoration)
Cottage cheese
Fresh fruit

*By choosing gluten free oatmeal you can make this recipe gluten free.

How to make it?

Peel the bananas and put them in the blender. Add the eggs, plant based milk, oatmeal and cinnamon to it. All ingredients for the pancakes are now in the blender.

Blend the ingredients for approximately 2 minutes until it becomes a thick batter. You can pour the batter slowly from the blender into the pan, you then get nice and small pancakes. Or you can pour it onto a ladle if you find that more easy.

Bake the pancakes for approximately 2 minutes per side. If they start to bubble on top or if the top becomes dry carefully try to flip the pancake and bake approximately 2 minutes on the other site. Continue baking until you are out of batter. You can make approximately 9 small pancakes with this amount of batter.

You can choose to decorate the pancakes. I used cottage cheese and strawberries to do so. Of course you can also choose other fruit or yogurt. And also without any decoration the pancakes are delicious.
You can now enjoy your healthy breakfast.
