5x my vegan breakfast favorites. Because eating vegan and plant based does not just mean that you only eat lettuce.

I am not a vegan myself, because I believe that you just need some kind of vitamins and minerals. We don't eat meat anymore for quite a while. With some exception when we eat at our family or friends. This has to do with the fact that we feel much better since we've stopped eating meat. If we ate meat (which was almost everyday) it usually was chicken from the supermarket. And we all know they are stuffed with antibiotics and other stuff which is not healthy for you at all. Not bad that we felt ourselves so much better after we stopped eating meat, we feel much more energetic and fit.

We also really considered to maybe eat completely vegan, but first of all I would miss cheese so much if we would. Besides that some vitamins can only be taken from animal products. When we stopped eating meat, I noticed quite soon I was more often dizzy. Lack of Iron and vitamin B12, because that is what you get out of meat. I spoke about it with somebody who knows a lot about food and he told me that you can compensate this by eating at least 2 eggs per day. And I must say since I eat a boiled egg with my breakfast and lunch I haven't been dizzy anymore.

But besides the fact I didn't completely turn vegan, I did stop drinking cow milk. From multiple sources I have heard and read that that is just not that healthy for humans to drink. It is used to be milk for the calves, why would humans drink that anyway?
On that point I did switch to plant base, because I make my latte every morning with oat milk. And I am convinced that everything is about balance and making choices.

I sometimes make the choice to do eat plant based for a day and be more aware of what I eat. There are that many options for people that eat vegan, much more than I expected. I also made a lot of lovely plant based recipes, varying from cakes to breakfasts. And if you want to eat more plant based you can try all these breakfast recipes. They are all completely vegan-proof!

1. OVERNIGHT OATS with APPle

Overnight Oats with apple. The big advantage of this plant based breakfast recipe is that it doesn't cost you any time in the morning to make it. This recipe is made the night before, you put the jar in the fridge and the next morning you only have eat it and you can even eat it in the car if you want to, isn't that perfect?!


2. Cocoa GRANOLA

Cocoa granola, again a very easy recipe. You can also make this recipe upfront, for example in the weekend. You can keep the granola for 1-2 weeks in an airtight jar, you only have to add it to your yogurt or almond milk in the morning. I used coconut yogurt with the granola


​3. Porridge with apple

Porridge with apple, this is one of my favorites in the winter. In the Summer I love to eat coconut yogurt with granola, but I find it too cold for that in the winter. Then I want to have a warm breakfast. And this plant based porridge with apple is the perfect solution. The combination with the cinnamon makes that it tastes a bit like apple pie.


4. Cinnamon raisin sandwiches

Cinnamon raisin sandwiches. I made these ones the first time for Christmas, but for every breakfast, lunch or brunch event you can make them. You can make these sandwiches the evening before and keep them for a few days. When they just get out of the oven they are lovely and unctuous so I couldn't wait that long to eat them.


5. Breakfast CRUMBLE with PEaR

Breakfast crumble with pear. This is definitely one of my all time favorite breakfast recipes. The combination of the warm crumble with the cold coconut yogurt is so nice that I make a crumble every weekend. With the amount I make I only have 3 portions so we are running out of it pretty quickly. But I love it so much! You can also make this crumble the night before, you only have to warm it in the morning for 10 minutes in the oven.
