Seed and fruit bread

Seed and fruit bread, this banana bread has the structure of bread and a nice bite because of the fruit and seeds it contains. Besides that this bread is also very filling and tastes delicious with a clot of nut butter.
It is a while ago, but on Valentines Day I received a package from 'the Smaakspecialist'. This package also contained a paleo mix fruit coconut with among other things raisins, inca berries, mulberries and seeds. I had made some breads that week from the book On the Go by Rens Kroes, so I knew a bit about the ingredients. I made my own recipe and it worked out just the first time and I loved the structure of it.
I cut the bread into big slices and put it in the freezer. When I went to work I could defreeze two slices and I had a healthy lunch. The taste of the bread itself is very delicious, but with a nice dot of nut butter it tastes even better. Sometimes I struggle with thinking of a healthy lunch to take to work. I rarely eat normal bread, not because I don't like it, but more because it is really heavy on my stomach. That is why I try to vary with other recipes and when I don't have inspiration at night, it is just perfect to be able to have this bread in the freezer.
I was free for the past days and baked a lot. So the freezer is filled again. What I also regularly do, is taking leftover from dinner for lunch, they usually taste even better than the night before. Do you have a nice lunch tip?

Baking time: 30 minutes
Amount: 1 bread 10-15 slices
