Strawberry pancake cake

Strawberry pancake cake, a nice idea for a luxury breakfast. The Greek Yogurt makes this a very refreshing breakfast.
Last week it was Mothers Day and now that I think about it, this would have been the perfect breakfast to surprise your mother with. Unfortunately I only think about it now, but it is always nice to surprise somebody random, instead of on a mandatory moment. Than is when it really becomes a surprise, because on Mothers Day everybody expects a nice breakfast, while nobody expects it the week after and than the surprise is only bigger haha. So that is a pretty good tip, to make this breakfast unexpectedly for your mother or for somebody else of course.
Nowadays I make pancakes almost every weekend. Jens even said it last week, you make pancakes every weekend, right?! And that is right and I just love them so much and they are healthy as well. Yes it takes you some extra time, but while they are baking, I can empty the dishwasher, boil an egg and make some coffee. Things I have to do anyway, so actually it only saves time haha. And I try to vary with recipes, but that doesn't always work out fine. I sometimes get a bit frustrated, because I know which recipe works and then I always wonder why I ever wanted to try something different again. So lately I tried to make strawberry pancakes, but they didn't become red at all so I threw more strawberries in, which resulted in nu structure at all and the pancakes falling apart. And the pancakes with Greek Yogurt that were not good at all and couldn't get any better. But now I had the best idea, combining my favorite pancake recipe with strawberries and Greek Yoghurt in the form of a pancake cake, that could only turn out to be a success. And it did!
Preparation time: approximately 5 minutes
Baking time: approximately 5 minutes per pancake
Amount: 1 cake consisting of 5 pancakes (2-3 persons)
You can now enjoy this strawberry pancake cake. Pay attention that you can't keep this one very long. I saved it in the fridge, but the next day it was not very tasty anymore. So if you don't eat that much or are with less people, it is better to make less batter to prevent throwing pancakes away.
