I remember very well when I was a kid and it became spring/summer and the strawberries where in the stores, my mum used to make strawberry pastries. That felt like a party and actually it was a sort of sign that the summer had begun. Usually at Easter we ate the pastries for the first time in a year. It even makes my mouth water when I write this.
It is not very visible on this picture, but these pastries were definitely not healthy. This was before my mum started her healthy lifestyle and way before I interested myself in healthy food. On the picture below you can see very clear what went on with the pastries.
It is Sunday morning when I have strawberries and cravings for those strawberry pastries, but of course a healthy variant. I send my mom an app message for the recipe. She sends me a picture of the handwritten recipe, how cool is that?! I am working on the recipe and I make a healthy recipe. The first time that I made them they were a bit too soft and wet, but the second time they were perfect!
Preparation time: 10 minutes
Baking time 15 minutes
Amount: 5 pastries
When the pastries are cooled down you can cover them with strawberries (or other fruit that you like. You can now enjoy these lovely, organic pastries.
