When I still lived with my parents, my mum used to get almond pastry in the shape of a letter from here job. She always finds them too sweet and too greasy and my sister doesn't like almond paste. So my dad and I ate it and I loved it so much. I'd even put it in the oven for a short while because the flavor is even better when it is warm!
Of course I wanted to match the flavor is my healthy almond pastry with that unhealthy one. So I started working on the puff pastry, but that was not very easy. I tried and tried, but I didn't get it the way I wanted to. I will definitely try that again sometime, but for now I chose puff pastry from the store. I did go to the organic store and bought puff pastry without additions and completely natural. In the supermarket they usually add sugar or other unnatural additions so pay attention if you buy puff pastry from the store.
With this puff pastry I did manage to make the almond pastry and believe me when I say this one tops the unhealthy one. And besides that I always believe something tastes better if you know it is healthy haha. But when this one came out of the oven and I took a bite I was back in time again. And the best thing is that this recipe is super easy to make. Are you going to make this almond pastry for the Holidays?
