Vegan gingerbread doll

Sinterklaas recipe, vegan gingerbread doll. This easy gingerbread is very delicious. And of course you don't have to make a doll out of it to make this recipe even easier.
I think of Sinterklaas as one of the most fun feasts. Even though my sister and I don't 'believe' for a long time, we still celebrate every year with my parents, uncle, aunt and nieces. And it is so nice to see everybody becoming so happy of all the gifts. I am super happy that we don't do any creative surprises (when you have to make something for somebody for example a ball if somebody loves soccer and the gift should be hidden inside). When I have a creative idea and make it, it doesn't look anywhere near the thing I thought off haha. I very much respect how other people can do that. So we decided when we didn't believe in Sinterklaas anymore we would continue the tradition in the same way. Which basically meant that our parents just bought a lot of presents for us. And while we were growing older we also bought gifts for each other and for our parents. And nowadays everybody buys something for everybody and with boyfriends coming in, it is getting harder. Because what can you give to the 16-year old boyfriend of your niece? Every year it is a bit of a puzzle, but every year it also turns out that everybody just like everything and it is more about the environment and the food than the actual gifts haha.
I can always think of a lot of gifts for myself. If I only have a look at the website of 'Dille & Kamille' it makes me want everything. So that is not a problem at all. Jens can never think of any gifts and he doesn't want to either. He always says that he doesn't want gifts and just likes seeing other people happy with their gifts. But I still like to give him something. But what do you give a man without a list? This weekend I again asked him and the only thing he came up with were hinges for the door. So I let my creativity flow and think of some nice presents for him. Last year I gave him a fire pit and we had a lot of fun with it in France, so maybe I'll again figure some nice gift out this year. Sunday I will be heading downtown with my mum to do our last shopping so who knows what we'll find.
The first nice thing of Sinterklaas are the gifts, but the other one are definitely all the treats. Last weeks you have seen a few of them coming on the blog and this week the gingerbread doll is online.
Preparation time: 10 minutes + 1 hour waiting time
Baking time: 15-20 minutes
Amount: 1 doll
Once the gingerbread comes out of the oven it is nice and crunchy, but not really the gingerbread that you know. The best thing you can do is leave it for just a night and the next day it is completely perfect.
