Vegan Overnight Oats with coconut. An easy vegan and healthy breakfast recipe, which you only have to get out of the fridge in the morning.
About 2 weeks ago on invitation of Emiel from Nutorious Peanutbutter I went to the open day of Kitchen Republic in Amsterdam. There were 20 food start-ups. They all had a different and unique concept and story. I had very much fun and of course I tasted a lot of lovely things and have seen a lot of nice concepts. Chocolate with peanuts (Chock and Rock), cake with pigment made from beets and lovely smoothies.
Like I said i was invited by Emiel from Nutorious Peanutbutter. That is a new sort of peanut butter, because Emiel thought it would be time for something different than a peanut butter sandwich. That is why he developed three different tastes of peanut butter: chili/sambal, white pepper and honey/cinnamon. All ingredients are organic, so I would say a perfect product. With Emiel I made an appointment that the month June will be dominated by Nutorious Peanutbutter. Every Friday I will share a recipe (breakfast or snack) with their peanut butter.

You can replace the peanut butter in all recipes with basic peanut butter or nut butter if you do not have the Nutorious Peanutbutter.

Cooling Time: 1 night (6 till 8 hours)
Amount: 1 portion
The moment you wake up the next morning, all you have to do is grab your breakfast out of the fridge. You can immediately start enjoying your organic, vegan breakfast!
