Vegan strawberry cake

Vegan strawberry cake with pistachio/dates cream. The dates make this cake very sweet, you do not even notice that there are no refined sugars added in this pie.
Strawberries, I love them! I was on the Market 2 weeks ago and I saw this sale, 2 boxes of strawberries for only 3,50. I could not leave them of course. But what do you do with all those strawberries? Right you make a strawberry cake with them! On the internet I was looking for inspiration and I soon found confectioners cream, sugar, whip cream and other unhealthy strawberry cakes. These cakes inspired me to make a healthy strawberry cake. I made a cream of pistachios and dates as layer between the strawberries and the bottom of the cake. That way the strawberries stick to the bottom of the cake and it gives the cake a very delicious sweet taste.
It is not really a cake to freeze and that is why I decided to make my colleagues happy with it. Within half a day the whole cake was gone. My colleagues (who are not all used to eat healthy) were very enthusiastic! I will share this recipe with you and I am curious if you are just as enthusiastic about this vegan cake as they were.
