Before we had our puppy dog Leyla, Sunday was always a day to sleep a bit longer. I love to sleep long and I hated mornings. Since we have Leyla, my morning mood reduced. Jens and I made a deal that we would alternate waking up early in the weekends. So if I can sleep longer on Saturday, Jens can sleep longer on Sunday. And sometimes I even offer him some extra hours of sleep, so I can start to bake. Sunday remains baking day for me!
This was my turn to wake up early, but I didn't mind, because I wanted to bake a lot of things that day. Leyla woke up at 08.00 and that was almost a new record. So I woke up refreshed. I was looking forward to a nice breakfast, but I didn't want to be working on it too long. Also because Jens could sleep longer, I wanted to surprise him with a nice breakfast. This recipe is perfect, because it is very quick to make and very delicious as well.
You can make 5 muffins with this recipe. It depends of course on how much you eat, for how many persons this recipe is. I ate 2 muffins and Jens 3, but I thought it was just not enough. 3 muffins is perfect, for sure if you add some yogurt, nuts or fruit to it. Of course you can also put the muffins in the freezer and eat them some other moment.
Preparation time: 5 minutes
Baking time: 25 minutes
Amount: 5 muffins (2 small portions)
Bake the muffins for 25 minutes in the oven. Pay attention that the baking time may differ per oven. You can decorate this breakfast with some extra Greek Yogurt, walnuts and blueberries. Enjoy your healthy, organic breakfast
