Cocoa fudge

Cocoa fudge, a lovely easy and organic recipe that fits perfect in a paleo and/or vegan lifestyle.

This recipe is not 100% organic, because the organic nuts are not available. All the other ingredients in the recipe are organic.
How to make it? Put the coconut oil in a small pan and put on low heat fire. Let the coconut oil melt like this. Make sure the oil does not boil. Once the coconut oil is melted, you can take the pan from the fire and set the coconut oil aside. Meanwhile the coconut oil is melting you can start with chopping the nuts. Of course you can leave them as a whole or you can chop them roughly to keep a bit of a bite in the fudge. If you want very small pieces of nut that is of course also possible, then it is easy to use a food processor. |
You can set the nuts aside, you do not yet need them. Grab a big bowl and put the coconut oil in this bowl, combined with the honey, cocoa powder and the nut butter. Mix very well. Because the nut butter is pretty sticky, you have to mix firmly. Make sure there are no clumps left in the mixture. Once everything is mixed well together you can stir the nuts through the mixture. |
Grab the brownie mold. Unfortunately I do not own a brownie mold yet. My cookie jar does have the perfect size for the fudge though. That is why I used the cookie jar as a mold. If you also do not own a brownie mold you can of course use an alternative. Do make sure that your alternative is not too big (the fudge will get very thin) or too small (the fudge will get very thick). Put a baking paper in the mold and gently fill the mold with the mixture. Put the mold in the fridge for at least 2 hours. |
After 2 hours you can get the mold out of the fridge and cut the fudge. You have to keep the fudge in the fridge, because it melts very quickly.
