How to make it?

Preheat the oven on 200 degrees Celsius (392 Fahrenheit). I chose vegan puff pastry from the organic store. It is best to buy organic puff pastry without additions. The puff pastry from the grocery store often contains unnatural additions or sugar. The best thing to do is to make the puff pastry yourself, but after 3 failed tries, I have postponed that for now. I chose cheese, because I am going to make half of the croissants filled with cheese. You can also choose sausage or cream cheese or any other filling you like. Or you can leave them natural as they are.

Sprinkle a cutting board or your kitchen work top with some flour, to make sure the puff pastry does not stick to it. Put 2 pieces of puff pastry on top of each other and press them firmly. Role them with the rolling pin into a rectangular dough. When you are content with the size of the dough, you can cut it diagonal.

If you want to keep the croissants natural without filling, you can roll them. Do you want to fill them? Put the filling on the largest part of the croissants and roll them.

To make sure the croissants will stay closed, you can make the closing part wet with a bit of water. If you push very carefully they will stay closed during the baking.

I made 2 croissants natural and 2 with cheese. I whisked an egg and used it to cover the croissants. That way they get a nice brown color.

Once the croissants are finished you can put them on a baking sheet on a baking tray.

Bake the croissants for 30 minutes in a pre heated oven. Pay attention that the baking time may differ per oven.
You can make the croissants the night before, that way you only have to bake them in the morning.
