Omelette witch zucchini
"I used thyme and goat cheese and covered the omelette with it."
Omelette with zucchini, this heavy breakfast will get you through your hangover and otherwise it is also a perfect lunch recipe.
Preparation time: 5 minutes

Amount: 1 omelette

How to make it? Peel the zucchini and cut in small pieces. Also cut the cherry tomatoes. Cut the stalks of the chestnut mushrooms and also cut them into smaller pieces. If you use organic zucchini, you can optionally leave the peel on. You don't peel the tomatoes and mushrooms so the healthiest option is to choose the organic variant. You can not wash the pesticides of unfortunately. |
Put the coconut oil or some butter in a frying pan and heat the pan. Once the oil or butter is melted you can put the vegetables in the pan. Let them bake for approximately 5 minutes, to make sure the vegetables cook slowly Meanwhile the vegetables are on the fire, you can put the eggs in a bowl. Whisk the eggs very well and add the (plant based) milk. Mix the milk through the egg mixture. Make sure they are mixed perfectly. |
Cover the vegetables in the pan with the egg mixture and make sure it is divided through the entire pan. If you want to add cheese, herbs, ham, bacon or something else this is the moment to do so. Cover the omelette with the herbs, cheese and/or other ingredients that you want to use. I used thyme and goat cheese and covered the omelette with it. Let the omelette stand on low heat fire for approximately 10 minutes with the lid on the frying pan. That way the vegetables and the egg will cook and it will become a nice omelette. Check every once in a while if everything is going fine. |
After approximately 10 minutes you can enjoy your omelette. Lovely to eat just like that, but also perfect on a sandwich.
